Scott’s passion for sushi began over 4 years ago when appointed as CEO of Sushi Sushi and he recently facilitated the sale of the business in 2019. Scott, under the new ownership, continues to provide executive leadership of the development and execution of Sushi Sushi’s vision and values while maximising expansion opportunities and navigating the ever-changing retail environment. His focus includes Sushi Sushi’s drive of profitable growth through innovation while ensuring excellence every day in every part of Sushi Sushi for the customers of today and the future.

Favourite thing about being part of Sushi Sushi: is working with a dynamic team of people that are passionate about bringing joy through constant innovation and improvement of our systems, our stores and our Menu.

Olivia Elsley – COO (Chief Operations Officer)

Olivia joined Sushi Sushi over 4 years ago and uses both her extensive operational knowledge, international expansion experience and sushi training to lead on daily experiences and drive strategic growth. Olivia oversees and develops the operational functions to enhance the customer experience from store locations to store designs; Olivia focuses on the best outcomes for franchisees and Sushi Sushi in the everyday mastery of our products.

Favourite thing about being part of Sushi Sushi: Working within a great network of individuals that have a shared vision that translates into a positive working team environment to ensure the best platform for mutual success and growth.

Gavan Meadows – General Manager (Commercial Partnerships)

Gavan has driven the journey of Commercial Partnerships as a General Manager at Sushi Sushi for the last five years. He oversees and develops Sushi Sushi commercial relationships with key business partners. In particular, the last twelve months have seen Gavan enhance our customers’ choice of locations for our grab and go products.

Favourite thing about being part of Sushi Sushi: watching our franchisee network growth each day by having quality individuals from different backgrounds join our business and the added value this creates.

Leo Liu – Business Development Coach

Beginning his retail career in the UK while completing his Business Administration studies, Leo joined Sushi Sushi three years ago as a Franchise Business Consultant. In 2021, Leo took on a new role of a Business Development Coach. In this role, Leo continues to work with Sushi Sushi Franchisees in developing their portfolios, and he is always on a look out for new talent. Leo uses his operational skills to guide guide and support new partners and existing franchisees
looking to scale up.

Favourite thing about being part of Sushi Sushi: Being a part of a big ‘family’ where everyone looks out and cares for each other and celebrates success.

Kathleen Carroll – Marketing Director

Kath has joined the Sushi Sushi team as Marketing Director and brings with her a wealth of experience in both food and QSR marketing. For the past 10 years, Kath has specialised in food marketing and is passionate about creating marketing campaigns that reach people through truly engaging and original content. Kath is responsible for directing the marketing strategy and managing the day to day function. She specialises in new product development and is experienced in both above and below the line marketing campaigns.

Favourite thing about being part of Sushi Sushi: The Product! We are so lucky to work for a business that has such a delicious menu and uses the very best ingredients. As a marketer, this gives me the licence to have so so much fun with my marketing because at the heart of everything we do is something that is truly special.

                                                         Favourite sushi: Do I have to just pick one?! I love everything on our menu. If I really had to pick one I would say Spicy Rainbow Uramaki.

Jamie is the National Operations Manager and has been with Sushi Sushi for over 6 years. Jamie overseas both Company and Franchise Operations and Training. Jamie’s background in operations includes overseeing operational roles, including working at his prior company in Vietnam. Jamie’s passion within operations and training is growing franchise businesses to be profitable and successful.

Favourite thing about being part of Sushi Sushi: Being able to support Franchisees growth and reaching their goals. He loves being part of a team member’s journey from starting as Artisan, working towards a Manager role then achieving their dream of becoming a Franchisee.

David Himmelfarb – National Franchise Operations Manager

David has recently joined the team at Sushi Sushi as National Franchise Operations Manager. David has over twenty-five years of experience is hospitality, retail, and franchising. He has owned his own multi-site hospitality business, as well as help build and scale a QSR franchise. David’s focus will be to drive franchise operation. Support and coach franchisees to deliver an amazing product and customer experience every time.
